If Varitek had been behind the plate calling these games, we probly would have witnessed no hitters instead of all of these high scoring games.

Yes, and the Sox would have lost every game 1-0 because he grounded into eight double plays, struck out six times, and popped the ball up on the infield twice.

No-hitters usually refer to a pitcher, not a hitter going 0 for 5.
